SPOKANE, Wash. — It can be hard to figure out what to make for dinner. It can be even harder to keep that meal balanced and nutritious.
Two local nutrition experts and moms have partnered to write a cookbook looking to solve those issues for the busy family.
‘The Balanced Plate’ by Monika Jacobson, RDN and Brea Seaburg, DNP makes it easy to do quick, delicious homecooked meals with common ingredients you might already have in the pantry.
The authors sat down with KXLY to chat about the book, common food misconceptions, and the importance of a balanced plate. You can watch that interview above.

Cottage Cheese Pancakes
These pancakes are ideal for easy mornings any day of the week. They’re nearly as simple as opening a package of pancake mix and adding water — but, they’re loaded with protein and entirely satiating! The cottage cheese may sound strange, but trust us: You’ll love the way it adds a melty goodness into this warm breakfast recipe. Add your favorite toppings and enjoy!
Yield: 10 pancakes
Ingredients: 4 eggs 1 1/2 cup cottage cheese, small curd 1 tablespoon baking powder 1 tablespoon sugar 1/2 cup almond flour 1/2 cup old-fashioned oats 1/2 teaspoon cinnamon Pinch of fine sea salt
Directions:
1. Mix all ingredients in a large mixing bowl by hand or add to a blender and mix well.
2. Grease a pan or a griddle with avocado oil or cooking spray and set to medium heat.
3. Spoon approximately 1/4 cup of batter onto the hot griddle.
4. Cook for two or three minutes per side. Serve immediately when pancakes are hot and cottage cheese is melted. Garnish with your favorite toppings!
Tips:
If the batter is too thick for your liking, add a small amount of water to thin it out.To balance the meal, add berries, fresh peaches, or banana slices and your favorite nut butter.These are best served immediately, but you can also cover and store them in the fridge for a couple days.
