SPOKANE VALLEY, Wash. — A new coffee shop is open in Spokane Valley.
Bluebird’s Cottage is half a block off Sprague Avenue on Bowdish.
It’s in the converted house that use to be home to Mangrove Cafe & Bakery.
It features coffee from Santa Cruz Coffee Roasting in California and baked goods from Spokane’s Sweet Dreamz Bakery.
“I wanted to make sure that we had something that was unique to Spokane that no one else had,” said owner James Horn.
Horn’s experience in coffee percolated for 14 years. Then it was time to open his own shop.
“I finally just made it happen. No time like the present,” said Horn.
Beyond coffee and baked goods, the shop also offers breakfast food.
“Breakfast sandwiches, breakfast burritos, avocado toast, kind of a whole, gamut of breakfast items.”
Horn’s coffee shop branches out in a different way too.
“I did the flower thing,” said Horn.
He offers boutique floral arrangements and the chance for you to build your own bouquet. It was a suggestion from a friend.
“She’s like, you really need to add that to your coffee shop and make it unique.”
Bluebird’s Cottage is open Monday through Friday, 6:00am to 5:00pm, Saturday 7:00am to 5:00pm and Sunday 8:00am to 4:00pm.
